Honey Brook Extra Extra Sharp Cheddar is hand waxed and aged for three years. This yellow cheddar is distinctive, adding color and sharpness when used for cooking. We use this in the cheddar blend in our toasted cheese sandwiches.
Wrapped in a classy black wax, this cheese is a staple at SFC. It is the yellow cheese that you find in our special blend of grated cheeses. This cheese adds the wow factor to a toasted cheese sandwich and to our famous mac and cheese. My favorite way to use this cheese is in a cheese ball. I love the color, and the flavor is outstanding at room temperature. Super sharp but smooth and nutty.
It’s All In the Packing: Hand Waxed Cheddar
Cheddar cheese is aged from three months to three years with longer aging time producing sharper cheeses. All of our cheddar cheese is packed by hand, taking forty pound blocks out of aging and cutting them into eight ounce bars. Much time and attention is given to the cheese at this time. We enjoy making homemade cheese balls and spreads with our cheddar cheese that is trimmed. These trimmed “ends” are also available in our retail store at a discounted price.

Cheddar cheese then moves into the waxing area where every bar of cheese is coated in clear wax and then two coats of a colored wax. Each colored wax identifies a different type of cheddar cheese. The wax dries very quickly, the bars are labeled, and ready to go for sale. Our Three Year Cheddar is waxed in a black wax.

- 8 oz. softened cream cheese.
- 2 T. of your favorite seasoning (try Halladay’s Lobster Bisque)
- 8 oz. of Three Year Cheddar, finely grated
Whip softened cream cheese and seasoning together in the mixer. Add finely grated cheddar and beat until well blended. Remove and shape into a ball, disk or heart. (I like a disk, it serves nicer.) Roll in pecan meal and parsley. (Or crushed pecans if you don’t have pecan meal.) The secret is to serve this at room temperature. My guests all say it’s the best cheese ball they ever had, hands down. It’s a crowd pleaser.
In 2012 our Three Year Cheddar won “Best in Cheese: Pennsylvania” in the 2012 Cooking Light Taste Test Awards: Artisanal Category, saying the following about our “extra extra sharp cheddar.”
